Mr. Yoo Young Gun of HoJoeng Ga, Korea’s 21st Culinary Grand Master, is a 3rd generation traditional confectionery maker. He carries on the royal traditions of making yeot. To make Korean Traditional Rice Taffy, he uses only 3 high-quality, locally grown, carefully selected ingredients of rice, malt, and ginger. He then steams them together, lets them lightly ferment with malt, and then separates the liquid, just like they were made for the royal court during the Joseon dynasty.
