Steamed Barley Dried Yellow Corvina (Bori Gulbi) - 10 Fish per Set
Experience the savory, and delicious flavor of traditional Korean “Jjin Bori Gulbi” or Steamed Barley Dried Yellow Corvina.
This yellow Corvina set utilizes traditional salting and drying techniques passed down over thousands of years in Korean history in modern, HACCP-certified facilities. The freshly caught fish are carefully sorted and only larger fish averaging approx. 30cm in length are selected.
The yellow Corvina is then seasoned with sun salt in its gills and mouth before drying for over three months in the cold winter sea breeze off Korea’s shores. This ingenious and ancient technique dries and preserves the fresh fish and intensifies its natural flavor in order to develop a deep, savory taste.
The fish is then woven with string and stored in high-quality pearl barley to add even more depth and layers of flavor. Finally, the fish is steamed with rice water, the final delicious Korean classic that’s very quick and easy to eat since you don't have to steam it yourself!
1. Defrost and place in a pan with a bit of oil and fry slightly.
1. Cut open the packaging and warm it in the microwave for 1-2 minutes.
1. Place a steamer on top of a pot of water (add ginger and/or rice wine for more flavor), then when water boils, place the fish inside and steam slightly. (You can fry after steaming for a crispy on the outside, soft on the inside texture).

What is Booseh?
Booseh is a large yellow corvina or croaker, mostly caught in the sea of China. These freshly caught fishes are then shipped to Beopseongpo in Yeongwang, Korea where the artisans use their expertise to semi-dry the fish to perfection with sprout barley and sea salt.
