1. Features

- Icheon Rice is the 12th registered Geographical Indication regional specialty.

- Icheon Rice has lower levels of calories, fat, and protein—which negatively affect the taste—compared to rice from other regions. Conversely, it contains relatively higher levels of thiamine, niacin, vitamins, and essential amino acids—which enhance the flavor—resulting in a taste that remains significantly superior to rice from other regions even after March or April of the following year. - Icheon City forms a basin surrounded to the north, south, and west by the Gwangju and Charyeong mountain ranges, which extend from the Taebaek Mountains. Consequently, it experiences fewer meteorological disasters such as typhoons and heavy rainfall. Furthermore, the groundwater used for irrigation is rich in inorganic components such as L, Mg, and Na, and the large diurnal temperature range during the rice ripening period makes it a region where high-quality rice is produced.

- According to the Dongguk Yeoji Seungnam (a geographical history book from the reign of King Seongjong of Joseon), Icheon is described as a place with vast and fertile land, a renowned production site for rice that produces delicious local rice to present to the King. Even when planting the same variety, Icheon rice tastes better than rice produced in other regions. The reasons for this are:

First, clean water. 88% of farmers in Icheon cultivate their crops using groundwater. Evidence of the quality of Icheon's water is the fact that OB Beer, Jinro Soju, Haitai Beverages, and Sempio Soy Sauce are all located in Icheon.

Second, a naturally blessed climate is a key factor. Located in a basin-shaped topography in the central inland region, the area experiences significant seasonal temperature fluctuations and diurnal temperature variations, resulting in excellent yields and quality. Furthermore, the abundance of sunlight during the ripening period creates an exceptionally favorable environment for rice.

Thirdly, there is the fertile soil. The secret of Icheon rice lies in its high content of grayish-red clay derived from granite gneiss, as well as its composition of weathered granite soil. This allows for effective water regulation and the supply of sufficient nutrients until the later stages of growth.

- Historically, the agricultural treatise *Haengpoji* (1825) from the Joseon Dynasty records that "rice produced in Icheon is excellent." Additionally, when King Seongjong stayed in Icheon upon returning to the palace after visiting the tomb of King Sejong, he cooked rice using Icheon rice and presented it as tribute; due to its excellent taste, it was frequently offered as tribute rice. In the traditional folk songs of this region, 'Bang-a Taryeong' and 'Jajin Bang-a,' there is a phrase that reads, "Yeoju Icheon Jachae Bang-a Geumsang Ttaraegi Jachae Bang-a." "Geumsang Ttaraegi" refers to a rice paddy where tribute rice was cultivated; this indicates that local rice was widely planted in this region since ancient times, and the rice produced here was of such high quality that it was elevated to the status of tribute rice.

- The climate is within an optimal temperature range, with temperatures slightly lower than in other regions. In particular, abundant sunshine during the ripening season and a large temperature difference between day and night ensure good fruit set.

- The soil is sandy loam composed of an appropriate mixture of clay and sand, allowing for efficient nutrient absorption.

- 88% of the water used is groundwater, and the irrigation water contains high levels of inorganic components, such as magnesium (Mg), which improves the taste of the rice, compared to other regions.

2. Characteristics of Koshihikari Rice

- It is a rice variety originating in Japan. - Koshihikari was first created in 1956 at the Fukui Prefectural Agricultural Experiment Station by combining two different varieties: Norin No. 1 and Norin No. 22. Known for its clear and transparent grains, this variety has become the most popular rice variety in Japan and is one of the most widely cultivated varieties; however, its taste is believed to vary by region. In particular, Koshihikari grown in the Uonuma region of Niigata Prefecture is widely regarded as the best, which is why rice from this area commands the highest prices in Japan.

- Although popular for its glossy, sticky texture and excellent taste, it is difficult to cultivate and has a low yield, so it is sold at more than double the price of regular rice.
