It is characterized by small, short, and round grains.

It is milled to preserve the germ and aleurone layer, preserving its nutrients and giving it a yellowish hue.

It has excellent flavor with a stickiness level between regular rice and glutinous rice.

Since Baekjinju rice has small grains and high stickiness, please use about 10–15% less water than you would for regular rice when cooking!

Please Note!

Baekjinju rice is milled to preserve the germ and aleurone layer, giving it a yellower hue than regular white rice; as shown in the photo below, you can see the germ remaining. It is much more nutritious than regular white rice, so please eat it with confidence!
