After the first stage of primary fermentation, the Onggi seals are broken so an optimized blend of all-natural dried radish, sea kelp, and citrus can be added to begin the second phase of fermentation. The fish is then matured for an additional 6 months before beginning ripening stages which takes at least three years! - Store at room temperature, away from direct sunlight, and refrigerate immediately after opening.
